It's a breaded and fried pork cutlet topped with a rich, savory red miso sauce. In Japanese, we would describe it as "サクサクの豚カツに濃厚な赤味噌ソースがかかっています" (Sakusaku no tonkatsu ni nōkō na aka miso sōsu ga kakatte imasu).
